Oooh, beet juice lemonade! I like that idea, especially as a refreshing summer cocktail :) We sometimes use the beet liquid for some very colorful salad dressings.

I just throw the cilantro and oil and garlic scapes in the blender without pre chopping anything. Even the stems of the cilantro are tasty and will blend up nicely! Cilantro definitely doesn't like the heat. It's too bad since everyone wants some when the tomatoes are ripe!
