Fish Tacos
This is a nice general recipe for fish tacos – which are a great application for cabbage. You could add a pepper sauté and some fresh tomatoes for additional toppings here.
¼ cup plain yogurt
¼ cup mayonnaise
1.5 tbsp lime juice
½ tsp each ground cumin, dry oregano and dry dill
Whisk these ingredients together in a small bowl and set aside.
4 tsp chili powder
2 tsp ground cumin
¼ tsp ground red pepper
1 ½ lbs mild white fish filets such as tilapia, rockfish or snapper (rinsed and patted dry and cut in 1 inch pieces)
Combine spices together then dip fish in spice mixture to lightly coat. Heat 1 tbsp oil in large frypan over medium heat. Saute fish pieces in a single layer until lightly browned, abt 1 min per side. Drain on paper towel, then sprinkle with salt.
8 corn tortillas
2 cups cabbage
Warm tortillas in microwave under a damp cloth or on a griddle. Fold1/4 cup cabbage, a few pieces of fish and 1 tbsp of the sauce inside each tortilla and serve with a wedge of lime.
